Looking for a fast, low effort delicious meal that is full of coastal flavor for your Outer Banks vacation or are you entertaining a large group of guests and need a crowd pleaser? Look no further than the classic low country boil!
This one pot dish is a favorite by locals and visitors alike. While the classic recipe is included below; there are infinite variations and it is easily adaptable for individual tastes and ingredients on hand. Whatever your fresh catch of the day or what is available at the fish market or grocery store can easily be included. If not everyone is a seafood lover then chicken breast meat chunks can also be included. Want more vegetables? Add some baby carrots to the mix.
This is a good meal to prepare for a BBQ, party or when guests are arriving at various times. Although, once prepared and served, it seems to disappear quickly.
If you have a large group and your pot is not very large, you can also cook in stages and remove the prior contents before adding the next set of ingredients. Cover previously cooked ingredients to keep warm.
Low Country Boil

1 sweet onion – cut into wedges
1 head of garlic – halved (optional)
3 (16oz) packages of cooked Chorizo or Kielbasa sausage, cut into 1” pieces
8 ears fresh white corn; husked and cleaned. Cut or break each ear into 2 to 3 pieces.
5lbs crab meat pieces (or just about any other seafood)
